Days filled with steam!
Over the past couple of days our kitchen has been filled with the scents of summer. Jams, jellies, bread and even some cookies. I had the wonderful luck of having a neighbors Apricot tree lose a limb in my yard. It was so heavy and filled with ripe fruit I had no choice but to preserve, bake or dehydrate every last apricot. We also ran into some raspberries and so we were able to get a lot of canning done. He and I discussed the draw that canning has over us and believe it is satisfying because we are planning for future. Opening fresh raspberry jam at Christmas time, serving our own Plum Sauce with our egg rolls during the holidays, and eating salsa year round just makes us happy. We can see our hard work on shelves in the basement and know what is in each and everyone of the jars.
