Timber and Frangelico...


A huge branch of my neighbors apricot tree fell onto my chicken coop!! No damage and when we hauled the limb to our back steps the apricots were hanging heavily waiting to be picked. So I started my canning season early this. I have made strawberry and raspberry jam and now I was canning apricots! I tried a few new recipes out this time and was pleasantly surprised.

 Apricot Mango Salsa


Makes 6-8 pints
2 diced mangos
5 cups diced apricots
1 1/2 c. bell peppers
1/2 c. diced yellow onion
1/2 t. red pepper flakes
2 t. minced garlic
2t. ginger
1 c. brown sugar
1 1/4 c. vinegar
1/2 water
( I added 2 anaheim peppers, 1 jalapeno pepper and salt to mine.)

Combine all ingredients in stock pot. Bring to a boil over high heat, stirring to dissolve sugar. Reduce and simmer for 5 minutes. Ladle into prepared canning jars. Process in boiling water for 15 minutes.







Next I made...
Apricot -Frangelico Jam
1 1/2 lbs. apricots
3 c. sugar
2 T. lemon juice
4 T. Frangelico




Peel pit and dice apricots. Combine apricots, sugar and lemon juice. Let marinate for 4 hours. Place apricot mixture in saucepan bring to a boil and continue boiling for 20 minutes until jam reaches 220 degrees. Stir in Fragelico and boil for 1 minute.
Ladle into prepared jars and process for 5 minutes.
(I added some cinnamon and nutmeg to mine.)
Make 3 half- pint jars

Lucky you to get all those apricots although I guess not so lucky for the chicken coop! I love apricots and your recipes sound yummy.

Wow! That's a tricky way to get a load of apricots. The tree limb that fell on our coop was just a dead oak. You are soooo lucky. hee, hee

Apricots are my favorite. I grew up on apricot leather and dried apricots. Seriously. Perhaps that is why my teeth are rotting out of my head.

Those recipes looks delicious.

Too bad about the branch breaking on your chicky coop. I am glad it wasn't too serious.

Talk about when life hands you lemons make lemonade (of course, for you instead of lemons insert apricots! :)) Glad nobody was hurt :)

Yum! Oh, and did I say Yum! I made peach jelly once when I was a kid with my great aunt's step daughter. Weird situation, I know. But it was so fun! I was in Texas visiting my aunt. I flew home, put some jelly on toast one morning, and promptly dropped the jar and broke it. Then end of the jelly. I was so mad! Okay, strange story, but it's here...so....have a great weekend!!

ooH i LIKE when things like that fall in my garden. Last year when I had the allotment plot, some pears from my neighbours plot fell on my side. I was a happy bunny.

My husband loves fresh apricots, the ones we get here are hard, so we only ever eat the dried variety.

The salsa sounds delicious. I'm off to check out the apricot cookie recipes!

OK I have been so busy I haven't been over here and I think we may have been friends at some point in history! I must try the apricot frangelico jam oh that sound too fab! And the chickens I will have to read more when I have a few moments, we are about to move move into a new house in a week and there is a large coop in the back and I have always wanted some fancy girls, and now my wish will come true. I can hardly wait till I have time to red every inch of your amazing blog! Hope your summer is going great.

Love the recipes..but I've never canned..don't have the space!
My Mom used to can blueberries each summer so we had the luscious stuff all winter..can taste it now
